Goddess Pasta Salad for Litha

This is a simple recipe for enjoying on those lazy summer days and it makes an excellent dish for your Litha celebration.

1 box (12 oz) tri colored spiraled pasta

1 large head of broccoli cut into florets, discard the stalk

1 small onion, diced

2 medium tomatoes, diced Or one can of diced tomatoes, drained

1 bag turkey pepperoni

1 small can black olives

Salt and pepper to taste

Goddess salad dressing or Ranch salad dressing

In a large pot, bring to a boil lightly salted water. Add the pasta and cook according to package directions. Drain and rinse in cold water. Add the broccoli, onion, tomatoes, and pepperoni and toss together with the salad dressing. Add salt and pepper to taste. Chill in the refrigerator for about 30 minutes before serving.
